ABOUT

Chef/Owner Josiah Tam was born in Vancouver BC and grew up attending school in White Rock. After graduating from high school he pursued a few different avenues of education before finally realizing that his true love was for cooking.

Josiah started his career as a dishwasher in a local steakhouse and quickly moved up the line. At this point, being sure of this career path, he enrolled in Le Cordon Bleu in London and moved to the UK for a year to study classic French cuisine. In this year he discovered a true passion for French cuisine and graduated in the top of his class. 

Upon moving back to Canada, Josiah was hired as a sous chef at a seafood restaurant in White Rock. He quickly moved into the head chef position and since then has worked in various kitchens, most recently being on the opening team of The Nest at UBC in 2014.

In early 2017 Josiah was presented with an opportunity to open his own restaurant and began the search for a location. After viewing many spaces he chose the space at Five Corners and began renovations on January 3, 2018. One month later, at the age of 28, Josiah opened his first restaurant, Barrique Kitchen & Wine Bar.
